Chicken Divan

I tried Chicken Divan out of a Keto magazine I picked up at my local Publix before the end of the year. I still don’t know how to pronounce it: It’s either “DIV-an” or “Dive-an” but it might as well be DE-Vine. This recipe is delicious – it reads as a typical Chicken/Brocolli/Cheese casserole, but the browned onion and mushroom gravy really makes this great. I made a few slight modifications to the recipe to account for cooking up pre-seasoned Southwest Chicken from Aldi as opposed to using rotisserie chicken since. It did take a little bit of extra time to cook up the chicken first, but the end flavor was fantastic! If you use pre-cooked chicken (pulled from a rotisserie or from left overs) it will obviously help expedite your meal prepping! I was able to get about 5 hefty servings out of this and a bite for lunch while I was cooking.

Ingredients

  • 2 tablespoons of butter
  • 1/2 cup finely chopped onion
  • 1 container of button mushrooms, chopped up
  • 2 teaspoons of flour (if you wanted to stay strict keto, you can use xanthan gum as a flour replacement – I didn’t, but I’m a Keto half asser remember?)
  • 1 1/4 Chicken Stock
  • 3/4 heavy cream (I used half and half just as well)
  • Salt and Pepper to taste
  • 1 cup shredded Cheddar cheese
  • 1/4 cup of mayonnaise
  • 1 tablespoon lemon juice
  • 4 cups of broccoli florets
  • 3 1/2 cups of cooked chicken (again, you can use rotisserie or left over chicken, or you can use fresh and cook it in advance of starting putting the recipe together

Put it All Together

  1. Preheat the oven to 350 degrees
  2. Melt butter in a large skillet, add onion to sauté
  3. Add in the chopped up mushrooms and sautee for another 5 minutes
  4. Sprinkle flour over top the onions and mushrooms and cook for 1 minute (you’re making the base to a gravy) Stir constantly
  5. Stir in the chicken stock, cream, sea salt, and pepper
  6. Bring to a boil; reduce heat to a simmer for 5 minutes, uncovered
  7. Remove from heat and let stand for 5 minutes
  8. Add in 1/2 cup of the cheese, mayo and lemon juice
  9. Stir in the broccoli and chicken to coat all of it with the gray
  10. Spray a casserole pan/dish with cooking spray
  11. Add the mixture to the casserole pan/dish – cover with more cheese
  12. Bake uncovered for 20 minutes at 350 degrees
