No Noodle Lasagna

No Noodle Lasagna is one of my Keto go-to’s… it hits the Keto trinity of meat cheese and veggies!! We can’t forget the veggies, things need to stay moving in there. If you read any of the comments on Keto pages, there’s a huge commonality in things slowing down in the BM routine. Get your veggies in people, I know we are half asking this, but gotta get in some veg. What better way than to hide it in plain sight in a No Noodle Lasagna. I’ve used this casserole in plenty of family parties, and no one had any clue that it was “diet food.” Confession, my Bean 1 did see the spinach and refused to eat it but that doesn’t stop it from being delicious – definitely his loss on this one lol.

Ingredients

  • 1.5 lbs of hamburger
  • 1 to 1.5 jar(s) of sugar free spaghetti sauce
  • Italian Spices
  • Bag of shredded cheese of your choice (logical choice is a mozzarella or Italian cheese blend, but interestingly orange cheese goes well with this too!)
  • Bag of spinach (this can be fresh or frozen)
  • Chopped garlic
  • Olive Oil to cook garlic in
  • Container of Cottage Cheese
  • Block of Cream Cheese
  • 2 eggs

Put it All Together

  1. Preheat oven to 350 Degrees
  2. In a pan, heat olive oil and cook the garlic
  3. Add the hamburger and cook through
  4. Drain the fat from the hamburger and return to the pan
  5. Add the spaghetti sauce and Italian seasoning to the hamburger and allow it to heat up to a low simmer
  6. While that is cooking, add 2/3 container of cottage cheese, a block of cream cheese and two eggs to a food processor – blend thoroughly
  7. Remove the meat sauce from the heat
  8. Start layering the ingredients in a 9×13 casserole dish -> meat sauce, liquid cheese blend mixture, spinach, cheese… you should be able to get two layers out of this
  9. Put in the oven for 40 minutes at 350 Degrees
No Noodle Lasagna

A couple of additional variations – you could use Italian pork sausage and blend it in with the hamburger. Chopped up frozen mushrooms would probably also be amazing. I’ve also added mushrooms as well and it’s delicious. Cook them up with the garlic in the beginning and get some of the moisture out before adding it into the casserole dish with the other ingredients. Enjoy this – this can be a simple recipe, or it can be spruced up even more with additional seasonings and veggie combinations!
